For its final maturation, it undergoes a one year finishing in casks that previously matured a sweet Oloroso Sherry. Tasting Nose: Thick, oily and creamy. Brine, stewed ham, woody, campfire, lots of smoked cheese, dried apricots, fresh pasta. Palate: Woody (like in a sauna), apricot, raisins and lots of BBQ notes. Coffee and toffee with a gentle smoke
